The GPA has to be high, especially in the pre-med courses. The MCAT score also has to be high, so spend your summers reviewing for it or spend them getting ahead on the coursework.
If you find time, hospital work or medical research looks good on an application.
You cannot use the fact that you're a single mom as an excuse for doing less well (unless you can show them it was only at the beginning and now you're managing), because med school will be that much more intense and they won't take you if they think you can't manage both.
Best line up some very reliable childcare, because you'll be studying intensively and will need to go to all the classes, get the work done on time - even when your kids are sick. That will continue through your internship and residency, and you'll also work on call hours once you're practicing, so consider it your lifestyle, not a temporary need.

You need good grades, take extra science courses outside of the basics (especielly graduate level science courses), volunteer/work in medical areas (anything), volunteer to do research with a professor with whatever he is working on, get good recommendations.
I personally love Doctor odf Osteopathic Medicine (DO) schools. They are much more open to people from non-traditional backgrounds.
